Brandon Bahoura earned a business marketing degree from Oakland University in 2007 and opened his first business, Pita Way in Independence Township, this past April.
‘I always planned to open up my own business,? said Bahoura , 26, of West Bloomfield. ‘I like working with my hands. I did some research and went into Middle Eastern fast food.?
He offers Mediterranean wraps and salads, made with marinated chicken and seasoned beef, and ingredients made fresh every day.
‘It’s my kind of food ? the type I watched my mom and grandmother cook,? said Bahoura, who trained with a master chef from Syria for months. ‘I like all of it. It has lot of flavor, with different types of spices.?
Set up like a sandwich shop, customers select white or wheat pitas with seasoned beef or chicken, topped with sauces such as garlic, tahini, or homemade ranch, as well as pickled vegetables, fresh hommus, grilled onions and tomatoes.
‘I always give tons of samples,? he said.
He also prepares grape leaves stuffed with rice, beef, and tomatoes, rice and potato dishes, and hamburgers for conventionally minded customers.
‘It’s better than a regular burger ? the flavor of the coals really sets it off,? he said.
Employing six, the business is growing, he said.
‘We have tons of regulars ? it’s a good start,? he said. ‘I wanted to be in an area where’s there’s not much in Middle Eastern food. I looked at the location, did some research, and decided to go for it.?
He’s planning for first his Taste of Clarkston.
‘From what people tell me, it’s pretty crazy,? he said. ‘Lots of preparation, we’ll bring a grill ? it’ll be really nice.?
