Distilled from the blue agave plant from the highlands of the northwestern Mexican state of Jalisco, tequila is the signature drink of the country.
While the brands may vary, Tomas Escamilla, owner of Escamilla Amigos Restaurant, says the drink of Mexico is the perfect match for the dishes at his local eatery.
‘Age is a big factor with regard to tequila,? said Escamilla, 39, who moved from the heartland of Mexico to the United States in 1985. ‘The more clear and refined tequilas are makes them very smooth to drink.?
Earlier this year, Escamilla Amigos began providing patrons a wide selection of tequilas, for the unique flavors of his native country.
Several tequila brands including Cabo Wabo, Corralejo, Don Julio, Patron, El Jimador and Cabresto are now available mixed in a margarita or by the glass.
Escamilla grew up in Guerrero, Mexico, about 1,200 miles south of the Texas border on the western shore of the Pacific Ocean. The Escamilla family, which included a mother and father along with five boys and two girls, were farmers in the rugged central region of the country.
Tomas, along with his brother Rosondo, who assists with the cooking duties, bring the right mixes of flavors from Mexico to town.
‘Tequila is 100 percent Mexican and goes well with our menu,? he said.
